🔥 Big Davie’s Pocket Cards
Onion Overture 🧅
- Olive oil (3 chef spoons)
- Red onion (1 x chopped)
🔥 How tae dae it
Heat yer oil and fire in the onion. Cook it gently until soft, sweet and starting tae colour. Nae rushin’. Yer building the foundations here, no waiting on a bus.
Garlic & Chilli Assault 🧄🌶️
- Garlic (6 cloves, finely chopped)
- Fresh red chillies (2 x chopped)
- Chilli flakes (½ tsp)
🔥 How tae dae it
In wi’ the garlic, fresh chilli and chilli flakes. Keep it movin’ for about 30 seconds until the kitchen smells magnificent and everybody suddenly wants tae know what yer making. Dinnae burn the garlic. Burnt garlic tastes like bitterness and poor decisions.
Tomato Paste Tantrum 🍅
- Tomato paste (2 tbsp)
🔥 How tae dae it
Add the tomato paste and fry it through for a minute or two. Let it darken slightly and cling tae everything in the pan. If it starts catching, a wee splash o’ water settles the argument.
The Big Red Bath 🍅
- Chopped tomatoes (2 x Cans)
- Dried oregano (1 tsp)
- Sugar (½ tsp)
- Salt (¾ tsp)
- Black pepper (½ tsp)
🔥 How tae dae it
In go both cans o’ chopped tomatoes, oregano, sugar, salt and black pepper. Stir the lot together, bring it tae a gentle bubble, then turn the heat doon. Let it simmer for 45–60 minutes. Stir it now and again and watch it turn thick, rich and considerably more confident.
The Wee Lift 🤌
- Balsamic vinegar (1 tsp)
- Butter (1 x good knob)
🔥 How tae dae it
Once the sauce is thick and Davie-approved, stir through the balsamic vinegar. Then drop in a good knob o’ butter and let it melt through the sauce. The balsamic wakes the tomatoes up. The butter gives them somewhere comfortable tae sit.
Pasta & Glory 🍝
- Fresh basil
- Parmesan
- Pasta of yer choosing
🔥 How tae dae it
Cook yer pasta, keeping back a wee mug of the pasta water. Toss the pasta through the sauce and add a splash of pasta water if it needs loosening up. Tear in fresh basil, shower generously wi’ Parmesan and get it served. Nae parsley placed wi’ tweezers. Nae artistic sauce dots. It’s pasta. Get it doon ye.
🎤 Sandra’s Substitutions
Nae fresh chilli? Add more chilli flakes. Nae fresh basil? Dried basil will survive the scandal. Want meat? Fire in crispy chicken, sausage or homemade doner if Jody’s been experimenting again.
🐶 Pixel’s Barketing
A good sauce disnae shout about every ingredient separately. It brings them aw together until folk remember the whole thing. Same wi’ yer marketing. If the garlic’s doing email and the chilli’s running Facebook but neither knows what the tomatoes are up tae, yer dinner’s fucked.
